My sugar free chocolate fudge

Fudge is always great, especially around the holidays. My recepie is totally customizable. First of all, u r going to need a double boiler. I like the insert type that I bought through pampered chef. Here are the important ingredients:
1- can of sugar free frosting
2- 10 squares of unsweetened bakers chocolate.
You will need to add Splenda to taste as well as heavy cream to keep the consistency smooth. I add a couple tablespoons of vanilla and nearly a cup of peanutbutter. After everything us smooth, pour into a parchment paper lined 8x8 pan and put in the freezer to set. If you cut into 20 pieces, it's 3.8 net carbs per piece ( not including the Splenda, heavy cream and peanut butter). If you cut smaller, then obviously there will b less carbs. To date, I've lost 75 pounds since last december!

Pizza chicken and a check-in!

It's been a while since my last post, but I'm happy to report I finally reached my goal!  My goal was 178, which I reached (and maintain at between 178-180).  So i've lost 35 pounds doing low carb (started March 13th) and 72 pounds total from Dec 15th.  If I lose any more, then it's just gravy.  
I've also started running about a month or so ago.  I'm getting faster, but I think my body will always resist!

Well, tonight I made some delish Pizza chicken.  I used boneless chicken thighs, but chicken breasts would be fine, if it's a good size, just cut in half.  Unless you can find the already flattened/pounded out chicken, you are going to want to use a meat flattener/tenderizer to pound your chicken out so it's flat.  After, pan cook and then transfer pieces to a baking dish, i used a 13x9-ish size, glass style.  once your chicken is in the baking dish, here's what you need:
-cheese of choice (i used cheddar, but mozzerlla or even provolone will do)
-pepperoni (i cut them in half)
-tomato sauce (hunts sells little tiny cans that are just a little bigger than the teeny tomato paste cans.  I find that the sauce they sell in those cans is the lowest carb and creates the least amt of waste)

1. preheat oven to 350.
2. spread desired amount of sauce onto the flattened chicken pieces
3. sprinkle with as much cheese as you'd like
4. cover the whole piece of chicken with pepperoni
5. put some more cheese on top. (you could also add other toppings if you are feeling creative).
6. bake for 14-18 min.

My mom, who is visiting (and who is super picky), loved this dish, even my oldest son and husband loved it.  I didn't calculate the carbs, but it's a pretty low count, especially low if you choose this over regular pizza!

Diabetes understanding gone wrong...

The website I posted above is a list of the best diets for diabetes from MSN.  Atkins isn't mentioned on the top 5, but when you Go to the U.S. News & World Report link on the page to see the top 20 diabetes diet plans, it shows atkins is #18!  
"One expert noted that diets like Atkins that are high in saturated fat can increase the risk of developing type 2 diabetes." 
Soo inaccurate!  (FYI: saturated fat is actually good for you!) 
Isn't diabetes a malfunction in insulin sensitivity? What causes insulin to be released? Glucose!!
How does saturated fat have anything to do with insulin response?
It seems like the diets that 'win' over atkins are ones that are over indulgent in carbs/sugar and some have no meat at all!  Seems like they are trying to recruit more people for diabetes and not cure people who currently have it. 
Someday, maybe atkins will be at the top of the list...

getting healthier lately


 You only get one body, so take care of yourself.  Someone I work with said, "I'm gonna die, I might as well die happy" (referring to food).  This is true, but I explained to him that certain foods can cause diabetes, obesity, etc.  If you chose to eat the right things and use the right products, you could die healthy vs. in pain...dying in pain due to avoidable choices isn't dying happy in my opinion, i'd be thinking to myself "why didn't I change something sooner?!".  Anyways, here's some of the changes I've made and plan to make...
1- I've been eating LCHF (Low carb High Fat) since march 13th.  I follow the atkins way of eating since it has some structure.  www.atkins.com
2 - I've started to used sulfate free shampoo.  The one I started using is at Sally Beauty Supply called "hair one" http://www.sallybeauty.com/cleansing-conditioner/HARONE01,default,pd.html?cm_vc=SEARCH
3 - I try to consume products sweetened with stevia vs splenda, aspartame, etc when I can.  www.zevia.com
4 - I bought some sulfate free soap today!  The lady at sunflower market said that the sensitive skin formula or baby formula would be good for washing my face with!  http://www.drbronner.com/DBMS/BAR.htm you can find the products cheaper on amazon!

3 - Looking to try out natural deoderant, that's prob the last thing I'll change.  I work outside in the heat, so I'm worried I won't be able to find anything to stand up to the challenge...lemme know if you know of a good brand from personal experience :)

Faux mac n cheese

So, recently i've found out that the supposed low carb pasta called "dreamfields" isn't really low carb (this will explain it for ya: http://www.fathead-movie.com/index.php/2011/05/19/low-carb-pasta-in-your-dreams/ ) and I might as well be eating regular pasta.  This evening, I really wanted some mac n cheese, since pasta is outta the question, i decided to use my awesome cheese sauce recepie with some mashed cauliflower.  Here's what I did:
1- boiled a bag of frozen cauliflower (i cook it longer than needed to make it extra tender)
2- drain
3- mash it up with a masher, don't food process it

5 - enjoy, i like mine with salt and pepper!

It's super easy and healthy.  If you can't get your kids to eat veggies (heck, if you are GROWN and don't like veggies), this is a great way to trick them. Here's a picture for ya.  I know it looks weird, maybe like eggs, but it's really very good and I can't wait to eat the leftovers!

**I know reading this for some people still may not convince them to turn to a low carb diet, i know how shocked I was when I learned low carb was the healthy way to go.  To me, low fat and lotsa whole grains = healthy.  I would kinda consider myself the queen of losing weight.  I lost 100lbs in high school by following a mainsteam 'healty' diet. (and i'm back to losing weight, just not as much, due to my back2back pregnancies).  Man, i wish I knew then what I know now about what 'healthy' is!**

coconut milk that is TASTY and low carb

Today I went to Whole Foods and found coconut milk on the shelf sweetened with stevia and vanilla.  Only 1 net carb for a whole cup!  I'm shocked and amazed.  It was on sale for $2, so i decided to try it out.  Once it's iced, it's pretty darn tasty.  It's great for making shakes and replacing milk in recepies.  Here's a pic:

A smaller me forever...in progress

This morning the scale said I weigh 195.2!  When I started atkins on March 13th, I was 212.  So, that means I've lost 17 pounds in 8 1/2 weeks : )  I'm pretty happy with these results.  I could have done even better, but when my parents were visiting the week prior to easter sunday, I cheated once during the week and once on easter sunday, causing a couple pounds of weight gain.  Looking back, those cheats weren't worth it.  Now when i think about cheating on my diet, I think to myself "does it taste as good as being thin feels?".  The answer is always "no".  I can't wait to lose 15-20 more pounds.  I want to be healthy and in shape for my husband and sons, as well as for the air force.

Here's some pics of where I'm at and I'm able to wear a pair of jeans now that I haven't worn since early 2009 (when i first got pregnant)!  I didn't lose enough weight inbetween my pregnancies to get my favorite jeans to fit, but now they do and i'm oh soo happy!

Mothers day weight loss!

ok, I stepped on the scale this morning and got a great mothers day gift. After a 2 week stall, i'm down 2 pounds! And, I can offically say I'm UNDER 200 LBS NOW! Yes, i'm 199.1!  It feels good to finally see this number.  Good luck ya'll!

Make your own lard

Butter is great, but it can get pricey.  Also, when you cook doesn't have a very high smoke point.  So, what is one of the best cooking oils/fats?  LARD.  It's not just something you can just buy in the store any more.  Yes, Morrell makes a lard, but I wouldn't buy it, it's shelf stable and doesn't list the ingredients.  Lard is supposed to be refridgerated anyways. 
Here are the steps to make your own lard:
1.  Go to your local grocery store and ask for pork fat trimmings.  See if they can grind the fat, just like ground beef.  I was able to buy 5 1/2 pounds for $1.59 at the military grocery store (comissary).
2.  If they wouldn't grind the fat, just cut it up in chunks and run small amounts through your food processer (that's what I did).
3.  Cook the pork fat on the lowest heat setting on your stove in a stock pot.
4.  It's best to use cheese cloth, but I didn't have any, so I used a wire mesh strainer to seperate the liquid from the unmeltable fat, which works pretty well. 
5.  Pour it in a canning jar and store it in your fridge.

The Vangriddle - low carb pancake sandwhich

I LOVE McDonalds McGriddles, to me, McGriddles and Mac Sauce are the best things about that place (not mixed together, of course!). BUT, my beloved mcgriddles are too high in carbs! This morning for breakfast, I decided to make some imposter mcgriddles aka 'Vangriddles' (the Van- comming from the first 3 letters of my name, duh!, haha), using a new pancake recepie I found through the atkins facebook page.  Here's the link to the pancake recepie:

what you need to make 2 pancake sandwhiches:
- 4 small pancakes (the recepie makes just enough)
-2 egg rounds - To make my egg round, I have the metal circular egg cookers that you can cook your egg in, usually used with sunny side up/over easy to make them look pretty.  I poured the scrambled egg right into the ring sitting on the pan and it made nice round eggs. 
-2 round sasuage patties (jones mild natural)
-1 slice of  Tillamook medium cheddar cheese (1/2 slice for each sandwhich, i like using the tillamook because it's not processed, but it's conviently sliced for a sandwhich
-optional - sugar free maple syrup (to dip the sandwhich in)

Some great words from Melissa Monroe on the Atkins page."before I log off today I thought I'd share with you all what keeps me motivated & why in my prayers at night before I fall asleep, I thank God for putting Dr. Atkins in our lives...."I think about those mothers that can't get on the rides at Disneyland with their children be...cause they don't fit in the seat of a ride....I think about that man I saw on a plane that had to buy two seats because that was the airlines policy for overweight people....and I think about that woman that when she died had to be lifted out of her home by a forklift through a boken wall....when I think about these people and even cancer patients that don't have the ability to walk because they are soo weak, well I must admit my feet walk just alittle faster that day on the treadmill....Bless you all, and have a wonderful low-carb evening"
 
what's keeping you from going atkins and being healthy?  This is a great plan.  Is it coincidence that an atkins-like diet is what they put patients on who have diabetes?  Why not make the smart choices now to prevent suffering during your golden years?   

CLEAN atkins day/No foofoo friday!

I don't know about you, but for me, sweeteners are part of an everyday diet for me.  Today I'm making the commitment to have NO SWEETENERS, for ONE WHOLE DAY!.   It's already killing me.  I tend to have a piece of SF candy after every meal, i just crave the chocolate.  After my bacon and eggs this morning, my mind was thinking "chocolate time!", but i had to resist the urge.  Not to mention, i usually have starbucks sugar free syrup in my coffee, and soda and/or energy drink that is sugar free.  That's just too much daily sweeteners, and some of them are toxic after a long peroid of time.  It's hard, but I know I can do it....and I just tell myself a smaller body is in process!!
sooo, no SF candies, atkins bars/shakes, no sweetener in my coffee, and the list goes on, just clean foods today.  I'm hoping that after one day of doing this, i can do it AGAIN and that sweetened things will be a treat and not part of a daily diet.

If you are one of my non-low carb dieting friends, let this be a challenge to you as well, no sugar for a day!  Make sure you read the nutrition on packaging to steer clear!


**I've had someone say to me since i've posted this post "regarding the blog: Atkins is a high fat, moderate protein, and low carb way of eating. I don't exceed my 3 non-caloric sweeteners a day (and count them as one carb and one sweetener) because that is what the "new book" says".  Well thank you, because for some reason, i didn't feel a need to count a sweetener as a carb if it said 0 carb, but I think that if i counted the serving of sweetener as a carb, that would help me out a ton!
It's just hard to stay w/in the 3 allowed a day because most energy drink are 2 servings!  I need to start bringing a coffee cup and green tea bags to work with me!**


I MUST NOT BE THE ONLY ONE ON ATKINS WITH THIS ISSUE THOUGH, it's good to have some light shed on it though :)

HERE ARE THE RESULTS!
What I ate today:
-BREAKFAST: 2 eggs and bacon with hot green tea
-SNACK #1:     1 serving of macadamia nuts
-LUNCH:          Mcdonalds double cheeseburger, no condiments, pickles or onions, with lettuce and tomato
-SNACK #2:    salt and vinegar pork rinds
-DINNER:        steak w/ sauted onions and cubed radishes in butter with a salad (romaine, cheddar cheese, cucumber, 1 carb creamy ceasar)

It was kinda challenging the first half of the day, but this evening feels easier!  I'm happy I was able to do this.  I need to keep this up and keep better track of my sweetener count in the future.  It feels good to take control of my eating instead of my eating taking control of me.

wonderous xylitol!

I've been doing some research about sweeteners.  I've came to the conclusion that Xylitol is THE BEST sweetener to use.  Not only is it beneficial to your teeth, but it's NATURAL and it measures pretty much the same as sugar.  I also love Stevia, which is commonly sold by the brand "Truvia" in the supermarket.  Another NATURAL sweetener.  It is hard to stay away from artifical sweeteners on the Atkins diet IF you are consuming the delicious bars and shakes (contains sucralose, related to the sweetener "splenda", both artifical).  Even though it's hard to stay away from these, if you can control what you sweeten with at home, then that is great! 
A simple step to weed out artifical ingredients:
1. READ THE INGREDIENTS!
know what you are eating.  If it was a perfect world, everything I consumed would be natural, but in today's world, we are soo busy, atkins bars and shakes really help me out when I'm on the go and allows me to stay low carb at the same time. 
Since I mentioned Stevia, a GREAT soda that is sweetened with it is called Zevia (http://www.zevia.com/).  you should really check it out, it may cost a little more than mainstream soda, but it's worth it.  Below is a picture of xylitol I bought from "Vitaman Shop" and next to it is the fudge I made with my own recepie.  My intentions were to make a chocolate bar, but that's not what happened.  It turned out tasty and rich though, the recepie is below....
Vanessa's Xylitol Sweetened rich fudge
1 stick of butter
3 1/2 T of unsweetened cocoa
4 1/2 T of xylitol
6 T Heavy whipping cream
2 teaspoons vanilla

Melt the butter first in a saucepan and then whisk in the rest of the ingredients.  Pour into a parchement lined loaf pan and let cool until it stiffens.  Enjoy!
*I think this recepie could be tweaked, but this is what I got on a first try and I'm pleased with the results*

Thoughts to ponder

Just realize this diet is forever.  What tastes good enough that is worth the weight gain?  There are low carb variations of almost everything, sometimes even multiple variations.  This way of eating is easy once you find replacements for your favorites.  I cheated twice in a week (one cheat led to another) and it made me gain 4 pounds.  The time I spent losing that gained weight, I lost time on my weight loss.  Think how good you will feel with that weight gone! It will allow you to do more activities, wear more fashionable styles, gain confidence, lower your risk for cancers/dieses/illnesses/etc - in turn, increasing your lifespan, which will also allow you to spend more time with friends and family. It's not always initially easy starting something new, knowing you have to be committed, but give the Atkins diet a chance and some time, it will be worthwhile.

Russell Stover's Sugar Free Candies

I must say - I'm in love with these candies, they taste great!  You an consume normally about 3 pieces or so of the candies for only 1 carb.  While I wish they made the candies with stevia, they are sweetened with splenda.  If you have a sweet tooth, these are perfect, instead of pigging out on full carb candies.  I swear, between my salt and vinegar pork rinds and these candies, i can't believe i'm able to lose weight, tastes too good to be true!

A new start

So, manymany people on Atkins didn't stay on the straight and narrow during Easter.  I, myself, can even say I slipped up yesterday.  Not someting I'm proud of, but things happen.  Today is a new start.  It's monday and it's almost summer.  Lets get back on track and get looking good for those summer shorts and swim suits!  Good luck ya'll!

Low carb sugar free hot drink mix

If you like your french vanilla or suisse mocha, Maxwel house makes a sugar free version that is only 2 carbs a serving, not so bad if you really want some cappachino!  It is also decaffinated and has only 30 calories!  These are great to use to make homeade frappachinos as well.

The French Butter Dish

I know for myself, I tend to eat a lotta butter on the Atkins diet. If I wanted soft butter on the spot, i'd have to microwave what I needed.  It usually ends up getting runny and that's not what you normally want to happen.  I invested (23.95 plus shipping) in a french style butter dish.  You can put 1-2 sticks of butter into it and it sits in water, so it stays fresh, room temp - soft!  The water makes contact with the butter and it creates a seal so that the oxygen doesn't get to it.  What cool about ordering it from the individual that I did, is that each dish is unique, no 2 are the same.  I thought about looking for a cheaper one, but with his, he adds a hole on the side of the cone that holds the butter so it has more contact with the water (better freshness).  Plus, i think it's great when you can support an individual instead of a corporation.  Here's the link to his site: http://www.frenchbutterdish.com/index.php

George Stella - a must read!

I came across the name of a man (on the atkins FB page) who lost a ton of weight doing a low carb diet.  George Stella!  I decided to google the name and see what came up.  He has a website and is an advocate for low carb eating.  He's kept it off for 5 years!  He has 4 published cook books that you can buy on amazon.  I bought 2 today and I think that both his and his famlies before and after pics he has posted on his website (at this link: http://stellastyle.com/newPM/cgi/pm.cgi?action=show&temp=story&session=session ) are awesome.  If you haven't made the step to go low carb yet, this may be the motivation and proof you need.

Vanessa's thick cheesy sauce

I was cooking some chicken breasts for lunch for when my hubby came home on his break and I wanted to make a quick sauce to put over them.
Here's what I came up with on the top of my head:
-2T heavy cream,
-2T butter
-1oz cream cheese
-1/4 cup cheddar cheese (more or less to preference).
I melted the 4 ingredients in a saucepan and then put it over the chicken when I was serving. Followed by some pepper. It was like a thick cheesy alfredo, it was great!
The recepie above made enough for my both of our chicken.


Great on chicken, i'm sure it would be good on some low carb "Dreamfields" pasta or on some broccli.

Soo close to my first goal AND some great food for thought!

.8 pounds til my basic training weight!  Thank you Dr. Atkins!!  Then once I reach that, onto my second goal, which is 20 pounds to go. 

Tom Naughton (director and maker of the movie/documentary "Fat Head") recently told someone this after the doctor told this certain someone that he's destroying his kidneys and needs good carbs for a balanced diet (other than veggies): 
The "destroy your kidneys" idea was based on faulty logic: Damaged kidneys leak protein, therefore it must be too much protein causing the damage. As it turns out, kidneys are damaged by excess refined carbs (especially excess fructose), ...and then protein leaks out. It's like blaming the water if acid causes a pipe to leak.

The nutrients in vegetables and low-sugar fruits are beneficial, but no human on earth needs grains or sugars to be healthy. If you want a few more carbs in your diet, paleo foods like nuts and sweet potatoes are fine, but I'd skip the grains entirely.

Good news and another dessert recepie!

So, I started this diet/lifestyle march 13 and today is april 10th. I have lost 9.7 pounds (can we just round up to 10?).  I find this amazing!  And for people who have a bigger amount of weight to lose, the pounds will fly off faster.  When I was starving myself and doing weight watchers, I lost about 10 pounds a month, but it wans't really satisfying or healthy. I have started going to a local butcher shop buying meats w/o antibiotics, growth hormones, grass fed, etc.  Free range chickens and eggs....you get the jist.  And i'm able to eat a diet high in fat, much enjoyable than a super low cal diet, weight watchers or low fat.  Not to mention healthier than those 3. 

Here's a recepie for "Jello fluff".  It's super easy to make and is pretty tasty:

WHITE CASTLE HAMBURGER PIE

WHITE CASTLE HAMBURGER PIE
1 pound ground beef
seasoning mixture (see recipe below)
2 eggs
1/2 cup mayonnaise
1/4 cup heavy cream
8 ounces cheddar cheese, shredded
Salt and pepper, to taste

Brown the hamburger with about half of the seasoning mixture below *; drain the fat and season to taste with salt and pepper. Stir in the seasoning mixture and put the meat in a greased 9-10 inch pie plate. Stir in half of the cheese, then top with the remaining cheese. Whisk the eggs, mayonnaise, cream and a dash of pepper well; pour evenly over the meat. Bake at 350º for 30-35 minutes. Let stand 10 minutes before serving.

Makes 6-8 servings
Can be frozen

*Seasoning Mixture:
2 teaspoons onion powder and 1 tablespoon dry minced onion. You can also sprinkle a little onion powder in with the egg/mayonnaise mixture.
Per 1/6 Pie: 476 Calories; 41g Fat; 24g Protein; 3g Carbohydrate; trace Dietary Fiber; 2.5g Net Carbs
Per 1/8 Pie: 357 Calories; 31g Fat; 18g Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs

Serving Suggestion: For a true White Castle experience, top each serving with dill pickles and mustard. Or, make a sauce of dill pickle relish and mustard.  **make sure you count in the carbs for the pickles** 

This stuff tastes awesome and is something you can make for people you have over or make 2 of and take to an event (such as a church luncheon or work event) and they won't know it's a low carb recepie.

super creamy chocolate mousse!


new dessert and it's super easy!
-1 oz of cream cheese
-1 tablespoon of cocoa
-2 packets of truvia
-1/2 cup of heavy whipping cream.
*optional* -1 tablespoon all natural peanut butter
...blend all ingredients until it forms into a mousse-like consistincy (a hand mixer works great). Makes 2 servings, tastes delish!
I'm addicted to this stuff, i eat it almost everyday!

Get that Beach Body

Ok, so this is the time of year that a lot of articles come out telling you how to give you a "beach body".  It will usually consist of a low fat and a good amount of carbs.  Why not try a different diet this time around?  How about high fat and low carb?  There's already studies that are showing a high fat diet is more beneficial and those who maintained the diet lost more and kept their weight off long term compared to those who did low fat. 
A sample of some daily food you could be eating:
Breakfast: eggs and bacon/sasuage
Snacks: olives (green or black), cheese, atkins shakes/bars, pork rinds, hard boiled eggs, etc.
Lunch: Cheeseburger with mayo wraped with lettuce
Dinner: Peperoni pizza with hot wings (pizza crust made using califlower and cheese based crust, sounds weird, but my husband and I can tell you that it's pretty great). 
Dessert: atkins endulge bar, low carb ice cream, etc (many dessert recepies on the atkins website).

Pair this new lifestyle with working out and THAT is your beach body plan.  Who knew you could fight fat with fat?! 
The only catch is that you have to keep up with this diet.  you can't just lose your weight and decide to be done and revert to your old ways, cuz as with any diet, you will gain everything back.  The low carb way is a lifestyle to live with.  I'm loving it.

These facts are on Tom Naughton's "Fat Head" movie website and I think they are great!:
  • There’s never been a single study that proves saturated fat causes heart disease.
  • As heart-disease rates were skyrocketing in the mid-1900s, consumption of animal fat was going down, not up. Consumption of vegetable oils, however, was going up dramatically.

It just boggles my brain that all my life I've been lied to by the gov't about what foods are healthy for me.  I should have known better I guess.

strange craving

So, I really love this diet.  I find myself craving fat, like butter and juicy burgers!  What's nice is that I'm actually eating a way that allows me to eat these things vs my old low fat diet.  I remember when I ate low fat, I told myself oils and fats were gross.  I was trying to fool myself!
 It's not hard for me to eat low carb.    Now while I do love my chocolate, but I can still have it on atkins (certain recepies and products).  There's even low carb cake recepies, so you can have your cake and eat it too!  Thank you Dr. Atkins!

Atkins' Death

On April 8, 2003, at age 72, Dr. Atkins slipped on the ice while walking to work, hitting his head and causing bleeding around his brain. He lost consciousness on the way to the hospital, where he spent two weeks in intensive care. His body deteriorated rapidly and he suffered massive organ failure. During this time, his body apparently retained an enormous amount of fluid, and his weight at death was recorded at 258 pounds. His death certificate states that the cause of death was "blunt impact injury of head with epidural hematoma".

There you go, so you can no longer say "I'm not going to do a diet that killed the guy who made it", because that isn't true!

stop making excuses!

Why not do atkins?  "there's too many limitations".  Nonsense!
When you can have butter, full fat cream cheese, eggs WITH yolk, delicious tasting low carb bread, bacon, sasuage, chicken WITH  the skin, full fat sour cream, pork chops and steaks w/o trimming the fat, pork rinds and the list goes on. 
When you are craving something sweet, there are atkins bars, shakes and recepies for chocolate bark, fudge, mousse and other desserts. 
I'm no doctor, but this is something i've learned from researching this diet and watching the documentary "Fat Head".  We only get ONE body.  While the medical field has made it possible to replace some body parts, patch things up as good as new and give us meds for everything, why let it get to that if you can stop it early on?  Many docs put people on atkins who have diabeties - wouldn't you think that the atkins lifestyle would be great to PREVENT diabeties?
what exactly is diabeties? it's a disease in which a person has a high blood sugar (glucose) level as a result of the body either not producing enough insulin, or because body cells do not properly respond to the insulin that is produced.  For most people, it devlops from all the years of eating too many sugars and too many carbs.  Our bodies produce insulin to fight the high levels of sugar, after soo much abuse to this system, the body devlops diabeties (and it's not just a condition that affects old people).
Did you know that breads and cereals are full of carbohydrates (both regular and whole grain)?  These carbohydrates covert to sugar.  While you are trying to live the low fat healthy life the doctor prescribed, your efforts are being sabotaoged.  Why does the gov't tell us to eat soo many servings of grains?  BECAUSE THEY ARE CHEAP. 
Switching to low carb can be hard for you, but not all things in life are easy.  I've gone through air force basic training, military police training and I have had 2 children.  Those were not easy things, but were well worth my efforts.  Yes, going low carb will change the way you eat, but isn't it worth it to take care of yourself, live long enough to see your grandchildren and have good health instead of shelling out thousands to the doctors?  I know for me, i love the low carb lifestyle VS. the low fat lifestyle and for people that know me, I lost 100 pounds in high school following a super strict low fat and low calorie diet (which was terrible!), so i know a thing or 2 about dieting.

How I lost 2 1/2 pounds in a day

so, i have been trying to get past my plateau, here is what I ate yesterday to help me out (it's kinda similar to the older atkins induction in the older books, except i had that slice of bread and in the old books, you don't eat shakes or bars):
breakfast: 3:00an
1 cup of grean tea
multiviatman
1 egg
1 slice of Julians Bakery carb smart bread
1 oz of cream cheese

snack:6:30
hardboiled egg

snack:8:30
chocolate chip granola atkins bar

snack: 10:30
2 hard boiled eggs
1 slice (1 oz) of colby jack cheese)

lunch: 12:30
atkins shake

snack: 3:00
2 hard boiled eggs
1 oz of colby jack cheese

dinner: 6:00
2 pieces of gordons frozen fish, 0 carb 90 calories a piece
1/2 oz of pork rinds

I also drank a gallon of water (which was gone by dinner), so i drank another 16 oz bottle with dinner.

calorie count: 1399, i didn't bother to calculate fat or carbs, but i know the carbs are under 10 and the fat is up there pretty good.

Goodbye to weight watchers, low fat, calorie counting and near-starvation diets!

Hello new lifestyle! 
Yes, I'm done with those diets, i've done them all!  First of all, I must share the movie/documentary that changed my life.  It's called "Fat Head".  It's a comedic documentary about how the gov't doesn't really care about our health, they push high carb diets because grains are cheap. (and if we have health problems, then hey, that helps out the medical/medicinal people, along with others.) (( I think it's important that we keep in mind that unlike what we'd like to believe, the gov't doesn't always have our best interest in mind.  All they see is money signs.  Just because they give you a nutrition pyramid to follow, doesn't mean it's correct.))  It even shows how the highly popular documentary "super size me" is just a lie and in "fat head", he eats fast food for 28 days and loses weight!  It's def worth a watch!

So, after watching this documentary on friday, march 11th 2011, I started the Atkins diet on march 13th.  I wouldn't have even probably watched it on, but my husband was working a swing shift, the boys were in bed, so i found i flipping through netflix.  Since starting, i've lost 8.3 pounds.  ((BTW, if you wanna watch the documentary responsible for my change of mind, go to http://www.hulu.com/ and type in "fat head" in the search bar.  It's about an hour and 44 min, it should pop up)).

You may wonder, what diet are you on to make you lose 8lbs in less than a month. 
It's the atkins diet.  NO, it won't kill you and NO, Dr. Atkins (the founder) did NOT die on his own diet (a popular myth).
The basis of the diet is high fat, moderate protein and low carb.  You are supposed to get a majority of your carbs from certain veggies and fruits, not grains.  No bread, pasta, rice, cereal, beans and sugar it sounds tough, but it's just  a matter of retraining your mind, cravings and taste palette.  Now you have to teach your brain that fat is GOOD for you!

There are lots of alternatives on this diet:  instead of high carb bread, if you must eat bread, there is a recepie for the highly coveted recepie - a "MIM" (muffin in a minute, there are many enjoyable variations you can find thru google or the atkins website) and also, there is a bread made by "Julians Bakery" and it's a wonderful tasting 1-carb-a-slice bread ( http://www.julianbakery.com/).  If you like mashed potatoes, there's a recepie called "fauxtatoes" (even my husband likes them) and if you love pizza, then there's a recepie for that as well! ( http://blog.yourlighterside.com/2009/05/low-carb-pizza-dough-cauliflower.html).  Kroger chain grocery stores sell a low carb yogurt that i'm a fan of and you can still have sweets, thanks to russell stovers sugar free items.

So now you want to know: "how do i get started?".  Check out the atkins website for videos on the 'stages' as well as some info you can read up on, the documentary I mentioned and the new version of the atkins book, "A New Atkins, A New You".

One thing you need to remember is that this diet isn't really a diet, it's a LIFESTYLE CHANGE.  If you decide once you lose your weight that you wanna go back to your old ways, you WILL GAIN IT ALL BACK.  Now, that's not saying you cant have a cheat meal once a month or so and maybe once a week once you reach your goal weight.  If you are like me, you might find yourself not missing the dear foods you didn't think you'd be able to live without.  I think it's very important to watch "fat head" to get a full understanding of this lifestyle.

Now that I got all of this explaining out of the way, the rest of this blog will be mostly of recepies, my weight loss, tips, exercising, links to other blogs i like and whatever else i decide, but the main vibe of my blog will be Low Carb.

***update***Dec 15 2011** when I started Atkins, I was 213lbs.  I am now about 175lbs - all thanks to atkins.  My total weight loss since having my son 1 year and 2 days ago is 75 pounds, thanks to atkins, i'll be able to keep it off.  Below is some info on my weight to put things in perspective :)
179 - my lowest ever in high school (I lost 100 pounds during my sophomore and junior high school years)
186 - meps ship-out weight
200 - bmt graduation weight (either I ate too well or a ton of muscle gain, maybe both)
214 - when i found out I was prego (I was doing security work and cured boredom with food, bad choice)
255 - what I weighed 2 weeks post pardum
220 - my weight when I got prego with baby #2
250 - 2 days post pardum
213 - my weight when i started the atkins way of eating in march
175 - my current weight. 
my goal was to meet my lowest high school weight, i've beat that, so my new goal is 169.
